Recipe 63 Kale Crisps
Ingredients
100g -200g Kale
Olive oil
Salt
Pepper
Method.
· Give the kale a good wash and lay them on kitchen roll to dry – dab off excess moisture
· Cut Kale into bite sized pieces – Or any size you’d prefer
· Place into a bowl and toss with olive oil (1 – 2 Tbsp.)
· Add in a couple pinches of salt and pepper
· If you prefer add some other spices – (Maybe some chili if you dare)
· Bake in pre-heated oven at approx. 150°C for around 8-12 minutes – until it gets crisp or desired ‘crookedness’

My name is Gemma and in March 2014 I will be climbing Mount Kilimanjaro in Tanzania in order to raise funds for the British Heart Foundation.
I signed up for the trek after I dicovered I have a (common and luckily harmless) heart condition. I have since found out that heart and circulatory diseases kill more people in the UK than ANYTHING ELSE, including all types of cancer put together! Any one of us could suffer from heart problems in the future. Diet plays a huge part in heart heath, so it was only right that I should pay more attention to my diet during the run up to the climb.
Mount Kilimanjaro is the tallest mountain in Africa at 19,340 ft, and the tallest freestanding mountain in the world. I am not a trekker and haven’t climbed a mountain since I was a child. I will be trekking for long periods averaging 8 -9 hours a day, over successive days, in both hot and well below freezing temperatures and over hilly and rugged terrain at times. This will require endurance, leg strength, aerobic fitness and stamina. My greatest fear is getting altitude sickness as this is the main reason why people fail to summit. Fit climbers are 17% likely to suffer from some form of altitude sickness whereas unfit climbers are 43% likely to suffer, so although there is no way to avoid this or predict it, the best way to reduce the effects is to be as fit as possible. I work 10 hour days and am on my feet all day with only a half hour break for lunch, so by the end of the day exercising after work was the last thing I wanted to do!
My Blueberry plan has fitted in well around my working day as I have lunches such as soup or left over dinners from the night before, which are quick to prepare and eat during my short break, but provide me with enough energy to last through the day. Snacks include things like fruit or nuts which I can eat on my walk to and from work, so I have enough energy to go for a run when I get home. I never thought this would be possible before!
When I first saw my plan I was worried about the huge amount of food that was on it; but I am actually eating fewer calories than before, without ever feeling hungry or lacking in energy. I am vegetarian so was worried that a diet plan may consist of typical ‘clean eating’ meals of vegetables and rice with plain tofu or quorn instead of meat or fish, but I have been pleasantly surprised by the range of vegetarian recipes in the plan. I have also been able to suggest my own meals like homemade sushi and summer rolls which Blueberry Nutrition have incorporated for me. Amazingly I can still eat my favorite treats, such as the occasional Indian takeaway or chocolate bar, although I have found I am not craving these any more.
I am paying all of the costs of the trip myself, so that every penny of my sponsorship goes directly towards helping the BHF, which means that I have a very limited food budget. The Blueberry plan has really helped me to stick to a budget because everything is planned in advance, so I don’t have an excuse to grab a ready meal or pizza on my way home from work!
I have already noticed many positive effects of my new diet plan as well as the increased energy I have far fewer mood swings than before, less spots and my hair has finally started growing again after about 2 years of being the same length!

We are extremely proud to announce that we have been asked to be a part of an extraordinary challenge that would scare the pants off most people!
Ashley Wilson along with James Ketchell (a serial adventurer) have decided to row the Indian ocean and are aiming to break the record for the quickest time along the way
What makes this challenge even more amazing is Ashley is severely epileptic and fits at least once a week. Ashley or Ash was also diagnosed with Hodgkin’s Lymphoma a type of cancer affecting the lymphatic system, after undergoing chemotherapy and radiotherapy he has been in remission for many years.
The Challenge
The Challenge is for Ashley and James to row the 3600 miles across the Indian Ocean from Geraldton, Western Australia to Port Louis, Mauritius.
The Indian Ocean is one of the least rowed oceans in the world with only 38 recorded attempts. Only 16 attempts have been successful and only 4 of these by a pair.
If all goes to plan and the weather is kind, we are aiming to break the record for the crossing by a pair which currently stands at 85d 2h 05min.
Ashley lost considerable amount of weight during his cancer treatment and needs to put on at least an additional 20Kg before the row takes place.
It is essential for Ash to put on this extra weight before embarking on the trip as both James and Ash will burning far more calories each day than it is possible to eat, so they will loss weight on the way across.
